This recipe is one my whole family enjoys and it’s extremely versatile! ⁣

Garlic/onions – optional ⁣
2 tbsp avocado oil⁣
2 cans black beans (I’ve also used a can of chickpeas or kidney beans instead), drained, rinsed and mashed ⁣
1 large tomato, chopped OR approximately 1/3 can diced tomatoes ⁣
Fresh spinach (optional)⁣
1-2 tbsp taco seasoning ⁣
Cumin, optional ⁣
Chili powder, optional ⁣
Smoked paprika, optional ⁣
Salt and pepper to taste (I usually don’t have to add much as the beans are already salted)⁣

In a large pan, over medium-high heat, heat oil. At this point, you can sauté garlic or onion if desired. ⁣
Add mashed beans and let them cook for a few minutes before adding tomatoes and spinach. Mix them in well and allow to cook for a few more minutes. Add taco seasoning and other spices if desired. ⁣
Once beans are a meaty texture, remove from heat. ⁣

Take a soft tortilla and fill half with bean mixture. Top whatever you want – we like grated cheese, corn, avocado, roasted cauliflower. Fold in half and pan fry on both sides. ⁣
Serve with tzaziki Greek yogurt, salsa, guacamole!⁣

You can also use this mixture to fill hard shell tacos, corn tortillas, sweet potato or eggplant boats! 🌮
